Alright, we are going to talk about one of my favorite vanilla cupcakes in Utah by Cupcake Chic!

Cupcake Chic calls their vanilla cupcake, Very Vanilla!

And it is just that…loads of vanilla flavor!

One thing I can say just about the look of Cupcake Chic’s cupcake is that that are all amazingly uniform. I really can’t think of a time that these cupcakes didn’t look perfectly alike! See, I’ll show you! (Obviously they’ll vary depending on occasion with what they are topped with.)

The very vanilla cupcake is a nice dense…okay it is a very dense cupcake. I like it. The cake is soft and moist and speckled with vanilla beans. It smells like a good cake and butter.

The frosting. oh my. i love this frosting. first off there is a lot..but not too much in my opinion. it’s the perfect amount of vanilla and butter together. smoothness hits you first, then vanilla then butter…and then you want more. first you inhale the vanilla, then you inhale the cupcake.

I don’t remember much about this vanilla cupcake from Primrose Retreat’s Babycakes Cupcakery.

I know it is called the buttercream.

The Chocolate Dessert Cafe: Vanilla Vanilla Cupcake

In my search for my favorite vanilla cupcake, or rather, my search to just become more familiar with Utah’s vanilla cupcakes. I’ve found one thing that I do when trying them out.

I smell them.

Well this cupcake, the vanilla vanilla cupcake from The Chocolate Dessert Cafe in Orem smells (and you’ll soon find out that it tastes) like the perfect sugar cookie. Which um…The Chocolate Dessert Cafe actually sells. And which, I enjoy.

Cupcakes as you know, force me into nostalgia. Did I use that right? Well it makes sense in my head. Cupcakes remind me of memories. And this cupcake has the memory sugar cookies all over it. Though it’s not my go-to cupcake at The Chocolate Dessert Cafe, I found it interesting. (Note: my favorite cupcake from The Chocolate is the chocolate caramel)

Let’s talk more about this vanilla cupcake.

The Chocolate doesn’t make this cupcake everyday. In fact, I’m not positive there is really a schedule for it. From what I’ve noticed and by info from workers at bakery you can usually get it on Thursday and Saturdays. (But no promises, here.)

You can buy it in the regular size or the mini size, which they call a baby cake.

See.. it is a baby. This cupcake usually has some sanding sugar or festive top. It was blue sanding sugar when I went in.

I think I have a new favorite spot in at The Chocolate. It’s this white table off in a corner upstairs. It has really good lighting and is sorta secluded and cool.

Okay, the cupcake. I found it interesting. Like I said it reminded me of a sugar cookie. It not only smelled like a sugar cookie but somehow resembled one when I ate it. The texture of the cake was reminiscent of a shortcake. A lot different from her other cakes, or any other cupcake for that matter. It had a major butter flavor pull through (that I liked) and was sort of crumbly at the bottom.

Then the frosting. Oh the frosting. I really enjoyed it. Again, it was reminded me of a nice butter cream frosting you’d find on a great sugar cookie…BUT…but then it’s more than that. It’s smoother, and almost whipped. Not too dense or heavy.

Overall, I found this vanilla cupcake threw a curve ball at me. I liked it but was confused by the texture. But then I liked the texture. The moistness of the cake hit me at the end and was buttery in a shortcakey way… It had a nice vanilla and buttery flavor…it all melts in your mouth at the end.

I don’t remember a whole lot about this cupcake since I haven’t tried it in more than a year. But I do remember really being impressed with the REAL white chocolate sprinkles and how they were combined with a nice cream cheese frosting.

I found Tulie Bakery to very cute, cool and delicious. Minus one thing: their vanilla cupcakes were a bit dry. I could tell the cake was made with quality ingredients, just over baked. I will say though, that I enjoyed the frosting. I would like to give these another shot cause I’ve talked to others that have enjoyed it.

but…i think this cupcake should be more in the $2.25 – $2.50 price range.

So for now I say, if you go to Tulie, grab some food (lunch was great! i loved their ciabatta sandwich with mozzarella, basil and tomato) or get the chocolate cupcake.

If you’ve tried Tulie’s vanilla cupcake — let your voice be heard. I’d really like to give this cupcake another shot if I hear enough positive feedback about it.

Diva’s Cupcakes and Coffee: Vanilla Bean Cupcake with Vanilla Bean Buttercream Frosting

And yet another vanilla cupcake. 

This time from Diva’s Cupcakes and Coffee in Salt Lake City. I have to admit, I’ve only been to Diva’s maybe three times and I’m not quite sure that I’ve tried this cupcake.

But doesn’t it look so pretty?

And that frosting is calling my name.

I found this picture on Diva’s facebook fan page. It’s a vanilla bean cake with a vanilla bean buttercream frosting and (for Valentine’s Day) a cute pink heart on top.

The Sweet Tooth Fairy: VaNIElla Squared

Vanilla Cupcake Week has officially been extended as a two week experience.

The opening of The Sweet Tooth Fairy first location in Provo was probably one of the biggest motivators for me to begin this blog. (See this post) I remember getting so excited and sneaking a peek at the location that I knew I would be visiting countless time for sweet tooth fixes. Then I remember Megan, The Sweet Tooth Fairy contacting me and having me try her cupcakes.

I have so much good to say about this bake shop. There is such a huge vision behind it and there are so many sweet treats that come along with the story.

We’re going to focus on VaNIElla Squared. And um, it hasn’t always had that name, or at least that spelling. Before we go further, let’s take a look at it:

Here’s the story of why The Sweet Tooth Fairy named her most classic cupcake VaNIElla Squared.

“Last week, it was brought to our attention that Stephanie Nielson, a remarkable woman who has inspired and lifted thousands of us across the country for years, loves our Vanilla Squared Cupcakes. She even posted about them on her blog the NieNie Dialogues . She jokingly mentioned that she thought we should “name it vaNIElla squared because I can guarantee I will single-handedly keep that cupcake selection going.”

After a few email exchanges with Stephanie, we learned that she was “ecstatic” and “touched” about the idea. As such, we have officially changed the name of our “Vanilla Squared” cupcakes to “VaNIElla Squared.” We figured the gesture would be a ‘sweet’ little legacy for her–who has candidly taught so many of us about the joys of life/motherhood. Her attitude, faith, honesty, outlook, understanding of what’s important is so inspirational and so appreciated.

Wasn’t that sweet? The Sweet Tooth Fairy bake shop has even held fundraisers for Stephanie Nielsen and her family.

Vanilla Cupcakes "VaNIElla Squared" - The Sweet Tooth Fairy (Provo, Utah)

Let’s get down to it. My review and thoughts about this classic flavor made by The Sweet Tooth Fairy.

The first thing I did when I opened up my cupcake box was smell the VaNIElla Squared cupcake. It’s smells good and I’ll describe what I smelled in one word: amaretto. That’s what comes to mind. I know you must be thinking, “What? Shouldn’t you be saying you smelled vanilla?” Well, no. See VaNIElla Squared is absolutely a vanilla cupcake, but what makes it special is how it varies from the traditional take on the vanilla cupcake. That difference being the frosting.

For me, the cake (though very good) is merely a vehicle to the frosting on this cupcake. (I could very well say this for MANY of my favorite cupcake flavors at various cupcake bakeries) The frosting is a complete mystery. The Sweet Tooth Fairy has told me she uses four different type of extracts in her frosting. All a secret.

My guess: amaretto, vanilla, coconut and shoot, who knows! When I did a tasting with The Cupcake Activist she guessed there was marzipan in it. The consistency of the frosting is great. Thick but not to heavy. You’ll notice in the first photo that it looks like some air bubbles have popped. I think this gives it such a cool homemade look. :) I love it.

The second element I paid attention to was the feel of this vanilla cupcake. Holding it it felt light and bear with me, almost squishy. (I say that with love) I only mean that if chosen, my little hands could squish the heck out of this cupcake’s cake into a tight ball real quick.  It really is a light, moist cake. The greatest thing about the cake being light is that it can still hold the frosting. The vanilla flavor in the cake pulls through mildly, but I get more of a spongy yellow and buttery cake as opposed to a strong vanilla.

You can spot the VaNIElla Squared cupcake from a mile away because of the sweet little candied cherry on its top. You’ll also notice that the cupcake that the Sweet Tooth Fairy is holding in her logo has a cherry on top. I’d like to think that she’s holding the VaNIElla Squared. Okay, I just double checked on her site because she has an updated logo and it’s now a cake. But it used to be a cupcake. I guess I’ll now say that it’s a VaNIElla Squared cake.

I’ve become more of a fan of this cupcake since November. I used to think it was good but just too sweet for my liking.  (That’s why I probably stick to my usual order of the Double Fudge Cake Bites, Cheesecake Cupcakes and others I find more balanced.) But I proved myself wrong. I don’t find it too sweet anymore, in fact, I think the next time I head to The Sweet Tooth Fairy I’ll probably buy this cupcake.

Oh and this reminds me about a post I need to write. The title will be “Why all cupcake reviews are subjective” or something to that matter. Oh man…I will go off on this one. I seriously have strong feelings that each time you consume a cupcake you will have a very different experience depending on mood, level of hunger, who you are with, environment, etc. But I’ll save that for later.

Dippidee: Vanilla Cupcake with Vanilla Mousse Filling

Dippidee is a bakery located in American Fork. They say they are the place of sweet surprises and yes, I would agree. I really like this bakery and just get happy when I enter. I hadn’t really paid much attention to their vanilla cupcake until this month. ..and I’m glad I did because I had a wonderful experience.

Ahhh look at this little colony of vanilla cupcakes! Isn’t it a glorious site? I’d say when you order a cupcake at Dippidee you really are digging into a dessert pretty much. Their cupcakes are usually filled and this increases the amount of richness and obviously size!

Dippidee’s vanilla cupcake is filled with a vanilla mouse filling. It’s not just filled a bit, these cupcakes are overflowing with vanilla mouse!

One thing I like about Dippidee is that they bake their cupcakes in these white traditioal souffle cups. I think they are the only bakery/cupcake business that does this to my knowledge. I like it and think it makes them different as far as recognition. I asked Marcee, the owner, or Liz, the business manager what made them decide to use these white baking cups and they just said it’s because Marcee’s family has always done it that way.

You should know that this bakery is a family business. I love family-run bakeries! Most of their recipes have been passed down from generation to generation in Marcee’s family. In fact, her mother comes in to bake! :)

Dippidee Vanilla Cupcake

The cupcake has a generous, but not over-the-top amount of frosting. The cake was heavy/sturdy enough to support the filling and frosting on top.

I love pulling and popping the white baking cups apart to unveil the cupcake. Yes, these souffle cups really do make a popping noise. Here’s Dippidee’s vanilla cupcake basking in the sunlight. The bakery has A LOT of natural light coming through.

And, here’s the cake after I so pleasantly took a bite from it. You’ll notice that the mousse filing more of a yellow color to it. Isn’t this a pretty cupcake (inside and out!)

The Vanilla Mousse really balanced out the cupcake. I found myself wanting the buttercream with or just after a bite of the vanilla cream filling. Their textures and consistencies were very different. I loved it. Then combined with the thick, yet almost spongy cake ….it was just perfect. I should also mention that this cupcake is usually chilled. And I enjoy that. It’s kinda cool with the buttercream not being so melty.

Oh and I must tell you about the smell. It just smelt like butter! Good butter! Butter baked the right way into cake form!

Mini’s Gourmet Cupcakes: Vanilla Cupcakes

I’m happy to give you my first cupcake spotlight for Vanilla Cupcake Week over here at Utah Loves Cupcakes!

I find it only appropriate to start with the vanilla cupcakes from Mini’s Cupcakes, since they were the first cupcakery here in Utah!

Let me also say that I really enjoy Mini’s. I love their committment to local, I love that they are expanding a bit (they have a second shop in Sugarhouse) and I honestly love, love , LOVE the size of their cupcakes! These cupcakes are right between a standard US mini and a regular size. Her pans come out of Europe and owner Leslie Fiet believes it is the standard size there. It’s about four good, and might I add delicious, bites!

Okay, so on to Mini’s vanilla cupcakes. See them below!

Aren’t they adorable! Mini’s offers two vanilla cupcakes. One is pink and one is blue! And catch their names…

Both cupcakes are identical, besides their decor. The cake is a  Madagascar Vanilla Bean cupcake and the frosting is crème cheese! The Breakfast at Tiffany’s cupcake is topped with edible gems and the Pretty in Pink cupcake is topped with pink and clear sanding sugar I believe. (Honestly, I didn’t even realize that they were the same cupcake until this month! I wonder which one sells better? ;) )

But to give you a better idea of what love and care goes into these cupcakes I asked Leslie Fiet, owner of Mini’s to tell me a bit more about them. She said,

“Mini’s Vanilla Bean Cupcakes are made from scratch, using Lehi Roller Mills unbleached flour, unsweetened applesauce, locally farmed eggs and dairy. We use a specially created professional bakery emulsion that adds a hint of citrus and butter undertones that enhance the Madagascar Vanilla.  The result is a dense and very moist cupcake with a light vanilla taste, without that overly sweet artificial vanilla taste.  A true vanilla cupcake experience not hidden under artificial flavorings. “

I have had this cupcake many times and here’s what I like about it.

*Size – again, you can’t beat this size of cupcake!
*Pretty factor (inside and out) The vanilla beans inside are really pretty and tell me quality ingredients are being used.
* Cream cheese frosting with the vanilla bean cupcake. I really don’t think you find this type of frosting with a vanilla cupcake. It’s a really nice pairing and I think it’s what makes Mini’s vanilla cupcake different than the others.

I’ll admit I’ve had some hesitations with this cupcake. The first time I tried it felt as if it were on the drier side, I thought this might be because of the beans. (don’t vanilla beans dry out cakes?) But then I kept trying it, and it’s been moist every time since. (must have just been that one time…) And each time I get it now, I appreciate the taste and quality more and more.

Do I recommend buying this cupcake and trying it out for yourself? You betcha!
