Sweet T’s Bake Shop in Spanish Fork

Southern Utah County might just be the next hot bed of cupcake activity in Utah. I’ve been hearing a lot of buzz about this area regarding cupcakes lately. Here’s just a smidgen of the news, though a very sweet one.

It’s called Sweet T’s Bake Shop.

It’s run by Tia Trimble, self-proclaimed bake shop princess! She runs the bake shop out of her home, specializing in cupcakes, cakes, and cookies. I’m happy to report she plans on opening her own store front sometime in 2010 in the Spanish Fork area.

She’s documenting all her cupcake flavors, current orders and experimenting on her blog sweettsbakeshop.blogspot.com. And by the looks and names of these cupcakes, I’m pretty interested! Let’s take a look!

Terrific Toffee Cupcake!
The moist cake is made with brown sugar and studded with toffee bits (that melt into buttery pockets of caramel goodness when baked).

And I’m pretty excited to meet this cute owner. You’ll know that she’s a Disneyland fan the second that you read her blog…even more so, she used to work at Disneyland on the Jungle Cruise! And…that is where she met her husband. Adorable!

She developed this churro cupcake to bring back some nostalgia of yummy that is the Disneyland churro. I myself have lots of fun DL memories watching the fireworks and eating a churro. I’m excited to try this cupcake!

Moist vanilla cake, ribboned with cinnamon and sugar. Topped with a dome of sweet butter frosting and crusted with more cinnamon and sugar.

So far her most praised flavors are her vanilla cupcakes with Sweet T’s classic vanilla buttercream icing as well as a candied pecan cupcake with rum buttercream icing.

Flavor Review: Creme Brulee Cupcake

I’m freaky in love with crème brulee. I don’t have it near enough because all my fat and carb calories are spent on cupcakes, so when I read on Twitter that The Sweet Tooth Fairy was making crème brulee cupcakes I was interested to say the least!

What exactly is brulee? And more importantly how would The Sweet Tooth Fairy work her magic and pull it into cupcake form? A few things were for sure, I knew it had to be torched, it had to have real crème brulee in it (I wouldn’t settle for a “this is crème brulee flavor” crap) and well it had to be true to The Sweet Tooth Fairy’s style.

For those of you reading that are not familiar with crème brulee (gasp!). Let me introduce you to this eggy, yet-not-so-eggy-if-done-the-right-way, wonder! Crème brulee is a dessert consisting of a rich custard base with a contrasting crackly layer of sugar on top, which has been torched or broiled. It has the most wonderful caramel flavor that could spin your taste buds into a crazy oblivion. Crème brulee actually means “burnt cream” in French and after tasting it you’ll understand that this kind of burnt isn’t necessarily a bad thing!

So how did The Sweet Tooth Fairy accomplish the task of bringing all the wonderful flavors and textures of this French classic into a single-serving cupcake dessert?

First off, The Sweet Tooth Fairy conquered the sought-after caramel flavor throughout the cupcake, starting in the form of the cake, the batter itself is caramel-based. (I’m raising my hands for joy.) If I’m correct, it is the same batter used in their dulce de leche cupcake, which you know I’m a fan of!

Next, I was happy to see that The Sweet Tooth Fairy did not ignore the fact that real crème brulee must be incorporated. Even better, the cupcake is filled with it! It’s a pleasant change in texture, still smooth and creamy like you’d get from the real deal. My only complaint: I wish it didn’t take a couple bites to reach the center. (Or do I just have a small mouth?)

My favorite part of the entire cupcake was the topping. The frosting is a brown sugar meringue that is light and rich with that buttery brown sugar flavor I crave; a nice addition to their current menu, if I do say so. Then to go even further, it has been topped with sugar and torched just like the classic dessert. Seriously, how fun is it to know that the little beauty had a flame to it? (Could it be my inner pyro?)

This cupcake stays true to The Sweet Tooth Fairy’s concept, which is bringing super yummy treats in all their variety and transforming them into cupcake form! She also brings a bit of nostalgia into the project. Growing up The Sweet Tooth Fairy’s mother, we’ll call her Grandma Sweet from now on, made her fair share of crème brulee and its not-so-distant-cousin, flan. The STF’s brother,  (sorry I don’t have a fun nickname for you yet…and don’t worry it won’t include any sort of fairy verbiage) had the idea to experiment with the flavor. Huge success! Bravo.

MashUps and Newer Flavors at The Sweet Tooth Fairy

The Sweet Tooth Fairy has been up to some very sweet things! She’s come up with something that I consider brilliant. It’s called the cupcake mashup!

Wondering what a Cupcake MashUp is? Here’s how The Sweet Tooth Fairy describes them:

“We’re taking our most delicious stand-alone flavors and mashing them up with other decadent flavors to create the perfectly paired cupcake!”

Here’s why I think it’s a brilliant idea.

A) new flavors are the best – they keep things interesting and customers wanting to try more!
B) the sweet tooth fairy is able to come up with a new flavor without exhausting more resource. see it’s not just “another” cupcake flavor that has a different kind of frosting. It’s a whole new cupcake (to me!)
C) it’s fun. sounds cool. and looks cool! TASTES good!

This is the box of cupcakes that I received from The Sweet Tooth Fairy for review. It’s pretty isn’t it?

You should know the background behind this cupcake innovation! See, Megan Brown, the owner of the Sweet Tooth Fairy is a huge fan of the TV show, Glee.  (see this awesome glee cupcake they did!) She’s particularly taken to their musical mashups and says,

“One night when we when we were watching Glee, I had a major culinary epiphany! I thought we should mashup some of our cupcake flavors!!! So, we just started trying it out… It took some time to nail down since each recipe/batter is so different, but after much mashing, we’ve got the recipes dialed in.”

Now they have a whole slew of Cupcake MashUp flavors that they are baking on a regular basis. They’re doing flavors like Raspberry Cheesecake, Chocolate Raspberry, Chocolate Cherry, Mango Raspberry, Peaches and Cream, Lemon Lime, PB & J, Chocolate Strawberry, Chocolate Cheesecake….and more!

Now let’s talk about the cupcakes I got to try! Note: not all of these are Mashups, some are just newer flavors that I tried.

isn’t this a rockstar line up? you can really see how these cupcakes are “mashed up” Especially the strawberry cupcake and cherry cordial.

Let’s break it down. Here’s what I thought about each flavor. You’ll get a smattering of my husband’s thoughts since he most always with me for these. :) We have fun!

Blueberry Cheesecake

*Smells like blueberry cheesecake ice cream that I’ve had at the BYU Creamery. :) (love that place!)
*Cake looks like a muffin
*Frosting looks like blueberry cream cheese that I loved on my bagels growing up (also a good thing)

How did it taste?
It tasted like real blueberries. Love, loved the texture, especially the top of the cupcake.

I couldn’t taste the cheesecake as much as I’d thought I would. For a split second it reminded me of yoplait blueberry yogurt that may or may not be a good memory. (i swear that was in my brown bag lunch like 3/5 days of the week in junior high!)

Admittedly, when I did this tasting (in January) it was not my favorite from the group. I wrote in my review book “I could take it or leave it.” But for some reason I’ve been thinking about this one the most? I have to try it again!

Black Cherry Cordial Cupcake from The Sweet Tooth Fairy Bake Shop in Provo, Utah

First off this cupcake just LOOKs cool! You can see the two cupcake flavors very well and the chocolate stripes on top of the cupcake are very zebra-ish! The cherry is fun and a true Sweet Tooth Fairy Look.

Smells like a box of cherry cordials. I’ve got lots of memories from this since my dad always had these around during Christmas.

How did it taste?
Every part of this cupcake really combined chocolate and cherry. I liked the drizzle–I liked. I think there could have been more cherries inside of the cupcakes. And final words of this cupcake from my notes: “If you don’t like cherry cordials, you won’t like this cupcake. If you love cherry cordials, you will love this cupcake.” Then i wrote, “liked” which means i liked this cupcake.

Chocolate Chip Cookie Cupcake from The Sweet Tooth Fairy in Provo, Utah

This was the first cupcake I tried that night. I thought it was very pretty.

How did it taste?
I loved the addition of the mini chocolate chips. (I usually don’t care about chocolate chips on my cupcakes) These were soft and nice and went well with the perfectly baked edge of the cupcake…which acutally looked like the rim of a chocolate chip cookie.

The cake was moist. It took me a few bites to realize there was a clump of cookie dough in the middle. I thought it was a good idea too that there were mini chocolate chips throughout the cupcake too.

The cupcake was very mild. The frosting was a cream cheese base. This was a smart choice, I think that the Sweet Tooth Fairy’s signature frosting would probably been too sweet. The cream cheese frosting brings a tang to balance the cake’s mildness and subtlety.

This cupcake was probably the biggest surprise of the bunch. It was definitely in a different sphere. On the outside the two cupcake batters were layered and “mashed.”

How did it taste?
This cupcake tasted just like some yummy strawberry daquiris (virgin of course) that my mom made for me growing up. You know those bicardi mixer brands? :) The cupcake is absolutely tropical. It tastes different and delicious. You get all those great flavors like pineapple, strawberry and coconut…it really threw me off guard in these darn winter months.

This was my husband’s favorite of the group. He said, “…it’s unlike any other cupcake I’ve tasted…which is very good!”

Alrighty, we are moving into my top two favorite Cupcake Mashups! Naturally they have an irresistable element to them: The Sweet Tooth Fairy’s Cheesecake Cupcake. (my all time fave cupcake from STF)

This smell is amazing! It’s exactly like the strawberry topping my mother makes to go on our Christmas morning waffles. These are pretty and very pink…and even have some goodness drizzling down the sides. I loved the texture and fresh strawberry on top!

Raspberry Cheesecake Cupcake from The Sweet Tooth Fairy in Provo, Utah

I think this was my very favorite. I would absolutely order this cupcake and even give it as a gift! I loved the real raspberries…you even get the seeds. I really don’t feel the need to pick this cupcake a part because I really just loved it and enjoyed eating it. Um…I loved the touch of graham crackers dusted on top, too!

The husband said it had a really nice feel at the end, sort of reminiscent of a jello poke cake he grew up eating.

Okay, here are some others that weren’t in the sample box…but I have to mention them!

Overall these new Cupcake MashUps are very promising. I found them to be a breath of fresh air and a way to jolt The Sweet Tooth Fairy’s current flavor offerings.

As mentioned before I find it to be a very wise move. It’s a good solution to adding new flavors to a cupcake menu. Sometimes bakeries will just plop a new flavor of frosting on a cupcake and say they have a “brand new flavor.” Plus on the bakery business side it can help a bakery go through/use current ingredients and recipes in a new way!

The Sweet Tooth Fairy is an innovator. She’s always trying new things and never afraid to do so! I love this MashUp concept!

Cupcake Charity Event for Haiti – The Cocoa Bean Cupcake Cafe

The Cocoa Bean Cupcake Cafe in Provo, Utah will celebrate its grand opening by hosting a charity event for the children of Haiti.

It’s called Cupcakes for Kids. All proceeds will be donated to Haitian Children by way of medical supplies. The event is put on by The Cocoa Bean Cupcake Cafe and is partnered with All HIs CHildren Charity.

The Sweet Tooth Fairy: VaNIElla Squared

Vanilla Cupcake Week has officially been extended as a two week experience.

The opening of The Sweet Tooth Fairy first location in Provo was probably one of the biggest motivators for me to begin this blog. (See this post) I remember getting so excited and sneaking a peek at the location that I knew I would be visiting countless time for sweet tooth fixes. Then I remember Megan, The Sweet Tooth Fairy contacting me and having me try her cupcakes.

I have so much good to say about this bake shop. There is such a huge vision behind it and there are so many sweet treats that come along with the story.

We’re going to focus on VaNIElla Squared. And um, it hasn’t always had that name, or at least that spelling. Before we go further, let’s take a look at it:

Here’s the story of why The Sweet Tooth Fairy named her most classic cupcake VaNIElla Squared.

“Last week, it was brought to our attention that Stephanie Nielson, a remarkable woman who has inspired and lifted thousands of us across the country for years, loves our Vanilla Squared Cupcakes. She even posted about them on her blog the NieNie Dialogues . She jokingly mentioned that she thought we should “name it vaNIElla squared because I can guarantee I will single-handedly keep that cupcake selection going.”

After a few email exchanges with Stephanie, we learned that she was “ecstatic” and “touched” about the idea. As such, we have officially changed the name of our “Vanilla Squared” cupcakes to “VaNIElla Squared.” We figured the gesture would be a ‘sweet’ little legacy for her–who has candidly taught so many of us about the joys of life/motherhood. Her attitude, faith, honesty, outlook, understanding of what’s important is so inspirational and so appreciated.

Wasn’t that sweet? The Sweet Tooth Fairy bake shop has even held fundraisers for Stephanie Nielsen and her family.

Vanilla Cupcakes "VaNIElla Squared" - The Sweet Tooth Fairy (Provo, Utah)

Let’s get down to it. My review and thoughts about this classic flavor made by The Sweet Tooth Fairy.

The first thing I did when I opened up my cupcake box was smell the VaNIElla Squared cupcake. It’s smells good and I’ll describe what I smelled in one word: amaretto. That’s what comes to mind. I know you must be thinking, “What? Shouldn’t you be saying you smelled vanilla?” Well, no. See VaNIElla Squared is absolutely a vanilla cupcake, but what makes it special is how it varies from the traditional take on the vanilla cupcake. That difference being the frosting.

For me, the cake (though very good) is merely a vehicle to the frosting on this cupcake. (I could very well say this for MANY of my favorite cupcake flavors at various cupcake bakeries) The frosting is a complete mystery. The Sweet Tooth Fairy has told me she uses four different type of extracts in her frosting. All a secret.

My guess: amaretto, vanilla, coconut and shoot, who knows! When I did a tasting with The Cupcake Activist she guessed there was marzipan in it. The consistency of the frosting is great. Thick but not to heavy. You’ll notice in the first photo that it looks like some air bubbles have popped. I think this gives it such a cool homemade look. :) I love it.

The second element I paid attention to was the feel of this vanilla cupcake. Holding it it felt light and bear with me, almost squishy. (I say that with love) I only mean that if chosen, my little hands could squish the heck out of this cupcake’s cake into a tight ball real quick.  It really is a light, moist cake. The greatest thing about the cake being light is that it can still hold the frosting. The vanilla flavor in the cake pulls through mildly, but I get more of a spongy yellow and buttery cake as opposed to a strong vanilla.

You can spot the VaNIElla Squared cupcake from a mile away because of the sweet little candied cherry on its top. You’ll also notice that the cupcake that the Sweet Tooth Fairy is holding in her logo has a cherry on top. I’d like to think that she’s holding the VaNIElla Squared. Okay, I just double checked on her site because she has an updated logo and it’s now a cake. But it used to be a cupcake. I guess I’ll now say that it’s a VaNIElla Squared cake.

I’ve become more of a fan of this cupcake since November. I used to think it was good but just too sweet for my liking.  (That’s why I probably stick to my usual order of the Double Fudge Cake Bites, Cheesecake Cupcakes and others I find more balanced.) But I proved myself wrong. I don’t find it too sweet anymore, in fact, I think the next time I head to The Sweet Tooth Fairy I’ll probably buy this cupcake.

Oh and this reminds me about a post I need to write. The title will be “Why all cupcake reviews are subjective” or something to that matter. Oh man…I will go off on this one. I seriously have strong feelings that each time you consume a cupcake you will have a very different experience depending on mood, level of hunger, who you are with, environment, etc. But I’ll save that for later.

This adorable and giant cupcake cookie jar makes it home at Provo’s newest cupcake hangout, The Cocoa Bean Cupcake Cafe. This picture was taken on their friends and family night. I automatically fell in love…

then two days later I found it being used in a new way.

a cupcake tip jar.  LOVE IT! Now, your wondering..what? I have to give a tip on my cupcake? No. I’m assuming these are for the cocoa bean drinks. I’ll be honest, I’d probably never tip on a cupcake unless it was the best cupcake I’d ever had in my life. EVER! …and I’m a huge proponent of cupcakes.

…but i would tip on a drink. :)

Favorite Cupcake Flavor {so far} from The Cocoa Bean Cupcake Cafe in Provo!

The Cocoa Bean Cupcake Cafe has almost been open for a week now here in Provo. I’ve got loads and loads of pictures and things to say about this new hip hang out.

But until then I’ll say this. If you go get the following:

This freaking-awesome-nutella-smacking-raspberry-jam-topped-with-the-tang-of-cream-cheese cupcake!

Or more commonly known as the Raspberry Chocolate Cheesecake cupcake!

It’s a jumbo size, priced at $2.75. Be prepared to share and grab a fork. It’s good.

Why I like it:
* Chocolate cake is good and moist, reminds me of a good texas sheet cake in cupcake form
* I am a sucker for anything Nutella
* I love raspberry jam (especially after a summer of helping grow and pick raspberries)
* the cream cheese offers the perfect balance to the above flavors
* and there is a fresh raspberry on top! (win-win)

oh…and if you can handle any more chocolate richness. Get the faux frappe called LOVE POTION! It’s like a chocolate covered strawberry in beverage form!

I spotted these cupcakes at The Good Earth store in Orem, Utah. They are from Charlottes Bakery.

Charlotte’s Bakery is a small family-owned operation nestled beneath the Wasatch Mountains in Salt Lake City. They wholesale their cupcakes and other gluten-free products to stores in Utah, California and Idaho.

I must try these pronto! Also, in the same vein, you may want to check out this post on Cupcakes Take the Cake about if people can really tell the difference between a regular cupcake and a gluten-free one.
