3 Utah Cupcake Bakeries Face-off Today
Utah is about to have its first public, cupcake showdown. The contestants are all owners of local cupcakeries or bakeries that sell cupcakes: Leslie Fiet of Mini’s Cupcakes, Romina Rasmussen from Les Madeleines and The Sweet Tooth Fairy herself, Megan Faulkner Brown. This local cupcake war is hosted by The Deseret News Fall Home Show and begins today at 3 pm.
The competition on both taste and decoration. Each contestant, along with their selected assistant will have 45 minutes to prepare cupcakes made with a secrete ingredient that one the judges have selected. The contestants have no idea what this ingredient will just that it will most likely follow the competition’s Halloween theme.
Bakery owners are both excited and anxious to find out what the mystery ingredient is, “I’m just hoping whatever the mystery ingredient is that it’s something that I’m familiar with. I don’t consider myself a ‘chef’ just a home-schooled, passionate baker, so I hope the ingredient is something I’ve worked with before,” says Megan Faulkner Brown, owner of The Sweet Tooth Fairy bakeries that span the state from North Salt Lake to St. George.
The mystery ingredient could be anything sweet or spooky from licorice, candy corn to pumpkin. Nobody knows, except maybe judges Chef Bryan Woolley, host of KUTV cooking show and chef; Chef Tom Woodbury, Cooking with Tom; and Steve Hatch and Katie Masterson, Hatch Family Chocolates. But who knows.
According to the competition rules. Each baker is able to bring basic, pantry items like flour, sugar, butter, eggs, oil, leavening agents and their own extracts and flavorings. They will then incorporate the selected item/ingredient and make a cupcakes that will be judged on texture/crumb, originality and the incorporation of the mystery box item.
After that the contestants must design a cupcake display that is a Halloween-themed character. A maximum of 48 cupcakes and a minimum of 12 cupcakes must be used. Displays will be judged on creativity, color combination, originality and overall appearance and best use of cupcake combination.
For me, this is going to be a very interesting competition. I’ve tried dozens of cupcakes from each local bakery; all are good, if not great cupcakes. It’s going to be a very hard competition to judge since cupcakes are so subjective. I just hope the competition lends itself to a level playing field. The biggest deterrent will be the use of the mystery ingredient and following the festive Halloween theme.
I’ve got absolutely no guess as to who the winner will be, I’m just smiling from cheek to cheek that this cool event is happening. I know that the contestants agree with me.
“The most exciting part about this is that Utah is doing its own version of Cupcake Wars,” says Mini’s Cupcakes’ owner, Leslie Fiet. “We are bringing cupcakes to the forefront so it’s good for all of us cupcake shops. It’s exciting to be involved in this cupcake competition.”

New site for Minis Cupcakes
A week or so ago I noticed Minis Cupcakes, Utah’s first cupcake bakery, had majorly upgraded their Web site. Stop what you are doing and head on over. It’s cute, pink and fun! My favorite element of the new site is the menu page. It features a slide show like element of each flavor with a fun picture and description. In case you are wondering, my favorite cupcake flavors over at Mini’s are the Black and White, The Diva and Breakfast at Tiffany’s.
A huge cupcake 411: a sweet little birdie or rather a talented cupcake baker told me that Mini’s will be publishing a cookbook due out February 2011! Can you believe it? I can’t wait to start baking my own mini cupcakes at home.
Sex and The City 2 Cupcakes by Mini’s Cupcakes in Salt Lake City
Kathy Stephenson, the food columnist for the Salt Lake Tribune has a great blog called Bite by Bite. She recently reported on Mini’s Cupcakes new line of Sex and The City 2 cupcakes.

“Mini’s Cupcakes in Salt Lake City is celebrating the release of the new movie “Sex and the City 2″ with 5 new cupcake flavors.
Bakery owner Leslie Fiet took cocktail recipes from SKYY Vodka, one of the movie sponsors, and turned them into these cupcake creations. (After reading this Tribune review, these treats definitely sound better than the actual movie.)
Glamour Gal • Lemon cupcake, soaked in vodka, creme de casis and lime juice, frosted with lemon butter creme. (pictured)
Park Ave. Princess • Madagascar vanilla bean cupcake, soaked in lemon-lime soda, merlot and lemon juice, butter creme frosting.

PARK CITY — A cupcake war is brewing in Utah. Mini’s Cupcakes was the first cupcake maker of its kind in Utah. Its signature cupcake is called the “Breakfast at Tiffany’s.” But Mini’s owner says LuAnn’s Cupcakes in Park City has copied her work with the “Tiffany’s Jewels” cupcakes.
Mini’s owner Leslie Fiet says, “She has several cupcakes that are completely different from my cupcakes, but this just happens to be our most popular and most distinctive cupcake that people associate with Mini’s.”
In a lawsuit, Mini’s claims that LuAnn’s has “adopted a strategy and philosophy to intentionally and unlawfully trade off the goodwill that Mini’s has built by infringing Mini’s trade dress rights in the Breakfast at Tiffany’s cupcake.
LuAnn Lukenbach who owns LuAnn’s says she doesn’t want to comment on the case.
Utah’s First Cupcake Lawsuit – Battle of the Blue Cupcake
Blogging about cupcakes isn’t always about sprinkles and sunshine. Sometimes you have stories that aren’t all hunky-dorie. This is the case with the current case between Mini’s Cupcakes and LuAnne’s Cupcakes.
If you remember, back in the middle of April I reported my excitement that Park City had a gourmet cupcake company named LuAnn’s Cupcakes. Read the post here. I also noted that I thought one of their flavors, Tiffany Jewels, look almost too similar to the Breakfast at Tiffany’s cupcake found at Mini’s Cupcakes in Salt Lake City.
No big deal, right?
Wrong. Absolutely wrong.

Cupcake Trends: Chandeliers in Cupcake Shops
Ever since I started this blog I’ve noticed that many, okay…most…cupcake shops have some sort of chandelier in their store. Have you noticed? I mean, why not? You have to have some sort of lighting and a way to make your shop your own…why not use a chandelier?

It was love at first sight for me when it came to these unique chandeliers inside Flour Girls and Dough Boys bakery in American Fork, Utah.

Okay, these little glittered birds on the chandeliers at Mrs. Baker’s Pastry Shop (SLC, Utah) are cool. If you haven’t been inside Mrs. Backer’s yet, it’s a Utah-must! It’s so cute, cluttered with pretties and wonderful!

You can’t see this chandelier very well inside of Dear Lizzie (Highland, Utah) but it’s there.
I’m not quite sure what Babycakes Utah looks like currently. But this is where I used to eat cupcakes when they had their bistro and cupcakery inside of Primrose Retreat. I think this area may now be a reception center. Either way, there is a chandelier.
Next time you pass through or stay in Saint George, Utah please PLEASE visit Twenty Five Main Cafe and Cake Parlor. I went there a few months ago and just loved it! (Dude, I need to give you guys my review…I’m so late on this!) I love the inside of their cafe and bakery!

Guinness Cupcakes for St. Patrick’s Day by Mini’s Cupcakes
Mini’s Cupcakes in Salt Lake City, Utah made some pretty festive cupcakes last year for St. Patrick’s Day:

Mini’s adds new flavor to their cupcake menu!
um… check out this info! I’ve been dying to tell you about it since I talked to Leslie this morning! Here’s the official release, and I’ll post some other info about the announcement later!
Attention all cupcake lovers – Mini’s Cupcakes is excited to announce the “Mary Ann” as the winner of its second year Anniversary Contest. This vanilla bean cupcake filled with handmade banana custard and topped with a meringue frosting with toasted coconut is the creation of new mom, Sarah Rushforth. As winner of the contest, Sarah will receive a dozen cupcakes a month for the entire year. And, to introduce them to their customers, Mini’s will be giving out a FREE MARY ANN CUPCAKE with any purchase on Monday, February 15th at both the Downtown and Sugarhouse locations.
When asked how she heard about the contest, Sarah mentioned she was sharing the Mini’s website information with another friend to give her ideas of what to do with their children. When she read about the contest, she said “I spent the whole morning and afternoon coming up with ideas.” Sarah submitted 9 of the over 300 cupcake ideas and flavors that came in during the month of January.
Besides the Mary Ann, loyal cupcake enthusiasts will get to enjoy other new flavors in the upcoming months. There will be new flavors of the day and/or month due to some other great entries that lend themselves to seasonal enjoyment. Leslie Fiet was pleasantly surprised by the variety of fabulous ideas and discovered that cupcakes are not for kids anymore. Over 25% of the entries incorporated some type of liquor (Rum, Bailey’s, Tequila and more).
The Mary Ann will not be available during the Valentine’s weekend due to Mini’s Valentine’s Half Dozen Special – 2 each of the Strawberries & Cream, Cherry Chocolate and Pink Valentines Cupcakes available separately or with 2 different sized bouquets from Twigs & Company.
Leslie Fiet is grateful for all the time and thought that went into the entries she received and she hopes her fans will enjoy all the new cupcakes in the upcoming months!

Mini’s Gourmet Cupcakes: Vanilla Cupcakes
I’m happy to give you my first cupcake spotlight for Vanilla Cupcake Week over here at Utah Loves Cupcakes!
I find it only appropriate to start with the vanilla cupcakes from Mini’s Cupcakes, since they were the first cupcakery here in Utah!
Let me also say that I really enjoy Mini’s. I love their committment to local, I love that they are expanding a bit (they have a second shop in Sugarhouse) and I honestly love, love , LOVE the size of their cupcakes! These cupcakes are right between a standard US mini and a regular size. Her pans come out of Europe and owner Leslie Fiet believes it is the standard size there. It’s about four good, and might I add delicious, bites!
Okay, so on to Mini’s vanilla cupcakes. See them below!
Aren’t they adorable! Mini’s offers two vanilla cupcakes. One is pink and one is blue! And catch their names…
Breakfast at Tiffany’s
and Pretty in Pink! How adorable, right!
Both cupcakes are identical, besides their decor. The cake is a Madagascar Vanilla Bean cupcake and the frosting is crème cheese! The Breakfast at Tiffany’s cupcake is topped with edible gems and the Pretty in Pink cupcake is topped with pink and clear sanding sugar I believe. (Honestly, I didn’t even realize that they were the same cupcake until this month! I wonder which one sells better?
)
But to give you a better idea of what love and care goes into these cupcakes I asked Leslie Fiet, owner of Mini’s to tell me a bit more about them. She said,
“Mini’s Vanilla Bean Cupcakes are made from scratch, using Lehi Roller Mills unbleached flour, unsweetened applesauce, locally farmed eggs and dairy. We use a specially created professional bakery emulsion that adds a hint of citrus and butter undertones that enhance the Madagascar Vanilla. The result is a dense and very moist cupcake with a light vanilla taste, without that overly sweet artificial vanilla taste. A true vanilla cupcake experience not hidden under artificial flavorings. “
I have had this cupcake many times and here’s what I like about it.
*Size – again, you can’t beat this size of cupcake!
*Pretty factor (inside and out) The vanilla beans inside are really pretty and tell me quality ingredients are being used.
* Cream cheese frosting with the vanilla bean cupcake. I really don’t think you find this type of frosting with a vanilla cupcake. It’s a really nice pairing and I think it’s what makes Mini’s vanilla cupcake different than the others.
I’ll admit I’ve had some hesitations with this cupcake. The first time I tried it felt as if it were on the drier side, I thought this might be because of the beans. (don’t vanilla beans dry out cakes?) But then I kept trying it, and it’s been moist every time since. (must have just been that one time…) And each time I get it now, I appreciate the taste and quality more and more.
Do I recommend buying this cupcake and trying it out for yourself? You betcha!

New Seasonal Flavor at Mini’s Cupcakes: Black Forest
One of my favorite things that a cupcake bakery can do is to rotate flavors and add new flavors seasonally. Mini’s Cupcakes in Salt Lake City does this on a regular basis and I love it!
The newest seasonal flavor at Mini’s Cupcakes is a black forest cupcake flavor.
Check it out, isn’t it pretty?
I recently headed up to Mini’s to see what it was all about. On their Web site, Mini’s describes this black forest cupcake like this:
“It’s a chocolate cupcake, filled with a cherry reduction, frosted with fresh creme topped with a cherry.”
After trying it, here’s what I thought/ my review:
Cake: I enjoy Mini’s chocolate cake. It got a good solid chocolate flavor and a bit of random and almost-fudge chunks of chocolate spread throughout.
Frosting: I knew I wasn’t going to be a huge fan of the frosting since I am not one for whipped cream fan for cake. But I’m sure those of you who do like whipped cream and obviously it’s a nice pairing for black forest cake with the chocolate and cherries. I’m giving the classic line, “it’s not you, it’s me…” here.
Filling: The site lists filling as a cherry reduction and the employee told me to compare it to a curd. After tasting it, I think I say the better description is a reduction or maybe even just pureed cherries. If I remember correctly, there was also a whole cherry somewhere in there, maybe not. If there was (it’s been a while, forgive my memory) I liked it!
Overall: Give this cupcake a try! It’s the perfect size and not a huge calorie commitment for an indulgence! Chances are you’ll probably like this more than I did. (Again, I am not the biggest black forest cake and whipped cream lover.)

5 Cupcake thangs to do in Utah this Weekend!
Okay, so I’ve slacked off a bit on this blog since Tuesday. Can’t help it, but I’ve been a bit sick.
If your looking for some cupcake thangs to do in Utah this weekend here are my suggestions!
1) Sundance Film Festival – Watch a film, watch celebs and eat a cupcake from The Sweet Tooth Fairy!

The Sweet Tooth Fairy will be temporarily setting up shop within the Main Street Mall (333 Main Street) in Park City, Utah for the Sundance Film Festival.
2) 101 Gourmet Cupcakes in 10 Minutes – cookbook book signings!

Wendy Paul has made a very cool cupcake cookbook that will save you time, money and give you much praise! I haven’t personally made any recipes from this book yet. (I am so ready to try her rootbeer float one!) But my good friend Elise aka The Cupcake Activist has and you should read what she has to say about it here!
The book is going to give you lots of (101) ideas of how to make gourmet cupcakes, most if not all, I believe are recipes to doctor up a store-bough mix.

One of my favorite cupcakes in Utah is this Vegas, Baby! cupcake from Les Madeleines. It’s a Vanilla Cupcake with Red Hots in the middle. (View the inside here!) Cream cheese frosting with real white chocolate sprinkles. Romina said on twitter yesterday that they have lots of cupcakes right now…so um…take your pick (cupcake menu here) and let me know which one you had. BUT if they have the Vegas, Baby! cupcake…you best take my recommendation!
4) Have a late night cupcake dessert at The Chocolate Dessert Cafe in Orem!

I know I keep mentioning this dessert cafe. But it’s because I keep falling in love with the idea of it more and more! My husband and I went last weekend after ice skating for a hot cocoa (tell them you want it with spices, like when they did Christmas in a cup!) and a mini chocolate caramel cupcake! Seriously, this is quickly moving up my little “best cupcakes in utah” list!
5) Get excited for Vanilla Cupcake Week on Utah Loves Cupcake!

Mini’s Retro Cafe – NOW OPEN!
Okay, I am completely swamped at work…but I have to tell you about Mini’s Retro Cafe
before this work day is over!
I attended the private launch party for Mini’s Retro Cafe last night in Salt Lake City. Mini’s Retro Cafe is the newest addition to soon-to-be cupcake empire of Leslie Fiet, owner Mini’s Cupcakes.
It’s an awesome cafe with comfort food and a space that instantly conjures up memories of my grandma’s house. In an awesome and delicious way! Here’s quick picture recap. Clearly, Leslie thought through the whole “retro” concept and I just have to smile at every little detail that was taken into consideration for the decor and menu.
I spent the night eating awesome food all made from scratch (besides the spam!).
Of course there were cupcakes. I had the chance to try Leslie’s BRAND NEW apple caramel flavor. Amazing!

I’m sorry, but cupcakes look awesome in this retro setting! Don’t you love the lamps, furniture and old issues of magazines! That cupcake there is my favorite of Mini’s Cupcakes: the Black & White.
Here’s a shot of the food we devoured. Gosh, there were so many fun items.
Deviled eggs (my husband’s favorite), homemade mac n cheese (my second favorite), Jello (very good!), egg salad sandwich (MY VERY FAVORITE), pudding in a cloud (husband’s other favorite), pigs in a blanket (with two kinds of huge-mungo sausages), fluffer-nutters (very fluffy) and spam starters (nice, served warm on crackers with swiss cheese and i liked!).
here’s a shot of their pudding in a cloud in retro serveware. seriously, just the lighting in these pix is just like my grandma’s. i’m so diggin this.
my favorite food of the night: egg salad sandwiches. Mini’s Retro Cafe makes their own mayo, which is obvious because these really are delicious.
I think this is a great extension of Mini’s current business concept. All from scratch and just plain good. I’m so happy there is more room to sit and hang out. And as a girl who is freaquently “cupcaking” I appreciate that this cupcakery serves savory food. Oftentimes when I’m out on my adventures, I am chasing the clock to make it to the bakery before it closes…which means I haven’t had dinner. So I welcome a savory pre-cupcake nosh.
Head on over to Mini’s Retro Cafe. Tell them I sent you and live it up. Stay for a while. You’ll feel right at home and totally relaxed. Pull up a TV tray, watch some old episodes of your fave retro show and heck, play a board game.
Kudos to you, Leslie, you’ve created something quite cool! …and as usual…completely delicious!
CHIP’S Ponch and Jon Cupcake(s) – Minis Cupcakes
I have to recommend this new cupcake flavor at Mini’s Cupcakes — it’s called CHIP’S Ponch and Jon.
The way it’s described on Mini’s Web site is this:
“A chocolate or vanilla cake with milk chocolate butter creme sprinkled with candy chips”
Woot woot for new cupcake flavors.
I love utah. I love cupcakes.
Though the name of the cupcake is centered around the “chips” on top, I think what’s really special about these cupcakes is the milk chocolate frosting! I was really impressed with it. I feel like it was a nice change from the more popular (in my experience) semi-sweet or bittersweet chocoalte buttercream frosting.
Give it a try next time you are at one of Mini’s locations in downtown SLC or Sugarhouse!

I did it! I finally visited the Sugarhouse location for Minis Cupcakes!

I loved it! It is a cool location, and I love the decor and retro feel! I tell ya, I’m so happy about the direction the Utah cupcake scene is headed! I mean, come on people, cupcakeries are opening second locations! Cupcakes are here to stay! Cupcakes are not a trend they are a tradition!
Congrats again, Leslie, on a great cupcakes and a new location.

Pretty Mini Wedding Cupcakes
There’s no doubt in my mind that these mini wedding cupcakes are by Mini’s Cupcakes in SLC. I love them. They are adorned perfectly in the brides wedding colors. And I can’t get over those little birds on top! I wish I knew what flavor they were…
