Seasonal Cupcakes at Mini’s Sound Spectacular

The way Leslie Fiet and her crew combine flavors in their miniature cupcakes is beyond me. All I know is that I love Mini’s cupcakes and can’t wait to try these seasonal flavors here for the holidays.

From now until December you can order:
* Pumpkin Chocolate Chip – chocolate chip cupcake frosted with creme cheese topped with chocolate chips
* Carrot Ginger – carrot ginger cupcake baked with brown sugar and frosted with cream cheese and topped with walnuts.

Christmas in full swing at The Chocolate

Come they told me pa-ra-pah-puh-pum….

That’s the music playing right now as I type from my favorite spot inside The Chocolate Dessert Cafe in Orem, Utah. I’m sipping some chamomile tea and snacking on the spicy, sweet n’ tangy seasonal molasses ginger cookie. I haven’t had it since the last holiday season and oh-how-I adore it. On my way out I’ll be picking up this holiday cupcake:

The chocolate peppermint one. Here’s what I had to say about it last year when I first tried it:

“It was a delicious holiday flavor. It was a great balance of the chocolate and peppermint, paired perfectly. The peppermint was apparent, but not cheap nor strong. It cooled my mouth, yet made my taste buds beg for more chocolate. I loved it. I dare say I’d take this cupcake over my faved Williams-Sonoma Peppermint Bark.”

And speaking of peppermint bark…The Chocolate just introduced a new cookie: Peppermint Bark that is. I tried it and holy cow it is chewy.

The Chocolate has decked their halls and bakery cases with sweet treats for kids of all ages. Head on over. You’ll love it.

2 Years of Delicious Utah Cupcakes

Hey there everyone!

It has officially been two years since I first started this blog. I can’t believe it! It seems like just yesterday I heard the news that The Sweet Tooth Fairy was opening, or that I made my first trip up to Mini’s Cupcakes for The Diva. Back then, Utah only had a handful of bakeries that sold cupcakes and really only one cupcakery. My how we’ve come a long way! This last year especially has been booming with new cupcake shops, cupcake news, events and flavors.

I feel so happy to be included in the deliciousness and hope that I contributed to the growth. Utah has some of the best cupcakes on Earth and I will continue to do my best to bring you the latest and greatest. I thank each of you for reading, commenting and being my friend. I have gained so much from this blogging experience: I’ve gotten to know wonderful bakery owners, fellow bloggers who I consider friends, and I got to do what I set out to do: get Utah on the map for cupcakes and support local business.

This month is dedicated to the second anniversary of Utah Loves Cupcakes! I’ll be sharing some favorite posts, new cupcake flavors, profiling bakeries, hosting giveaways for cupcakes and gifts and even announcing my favorite cupcakes of 2010!

Made of: a crazy-perfect marriage between an orange sweet roll and sweet n’ tart cranberry bread. But then it’s a cupcake, which makes it even better because it’s topped with Cupcake Chic’s addictive cream cheese frosting.

I tried Cupcake Chic’s November flavor of the month for the first time today. Cranberry Orange is a cupcake with holiday flare. The orange cake is perfectly subtle yet present and after your first bite, I think you’ll be jsut as impressed with the fresh cranberries that appear in the cake. It’s all topped with a comforting cream cheese frosting and festive garnish. Forget tradition this Thanksgiving and order a cupcake for your Turkey Day dinner. I dare you.

One of the beauties of the cupcake is that it is easily transportable and a great on-the-go dessert. But depending on how your local cupcakery packages it for you, you may have some problems. The Cocoa Bean Cupcake Cafe in Provo, Utah has definitely done cupcake to-go packaging right. Check it out:

I ordered it to go one day and was super impressed with how they packaged that cupcake up. It even included a fork and napkin–how kind! (Now I know what you are thinking, who needs a fork with their cupcake? Well dear, you do: if you are eating a giant cupcake from The Cocoa Bean. The Cocoa Bean realizes that and goes the extra step in giving their customers that fork.) It’s all in the details, friends…details!

Stylishly Sweet: The Chocolate Opens New Location in West Jordan

The Chocolate Dessert Cafe, home of the tempting Chocolate Caramel Cupcake that I love so much, will open a second location next Monday, November 2. Tonight I had the chance to get a sneak peak of this new West Jordan sweet spot.

In my mind there is a fine balance that must be achieved when opening a second location. You want to maintain your brand, but also give each new location its own feel and flavor. The Chocolate has managed to do just that. The second I pulled off of Redwood Road an adorable old brick home with a green door jumped right out. I immediately knew this was the place.

There’s a special sorta magic that comes with an old home. Every nook and cranny tells a story and somehow manages to bring up some sort of personal nostalgia. From fancy door knobs and stain glass windows, rounded doorways and obscure drawers in the middle of halls; to built-in bistro seating and a checkerboard floor, this new location for The Chocolate has it all..and it just works.

True to the owners’ style, Ange and Craig Christiansen transformed each room from wood floral to ceiling. Salmon, chartreuse, chocolate and pale blue walls are adorned with grouped mirrors, pictureless-retro frames, lovely lamps, funky-patterned upholstered furniture, and stylish floral-inspired art.

The front room sticks out most with its matted, bright white hearth.  Each end of the mantel are lit up with colonial light sconces that give the room a welcoming ambiance– perfect for a late night dessert. Speaking of dessert…it’s the reason you should go to The Chocolate. It’s not called a dessert cafe for nothin’.

The menu at the West Jordan location stays the same. And it’s a good thing, because West Jordanites can now satisfy every desire for all things cake, cookies, brownies, tarts, lemon bars and of course…cupcakes. But it doesn’t end there. The Chocolate also houses extra special desserts from the kitchen like The Cazookie (two cookie doughs baked together in a tin and topped with a scoop of melty vanilla ice cream) and The Magic Potato (which is actually The Magic Pumpkin for the month–buttery brown sugar, pecan-crusted sweet potato or pumpkin with a scoop of vanilla bean ice cream), it’s a real indulgence.

A cupcake that is more cake than frosting…

Twenty Five Main Cafe & Cupcake Parlor is one cupcake location in Utah that I don’t give near enough attention to on this blog. Yet, I often find myself craving their vanilla strawberry cupcake on occasion and then proceed to justify a trip down to St. George to satisfy the call.

I’ve had nothing but pleasant experiences at Twenty Five Main. I adored the owners and the unique atmosphere they created at Twenty Five, I loved breakfast and lunch…try anything they recommend, but most of all I loved that darn vanilla-strawberry cupcake.

Joey Dye, one of the owners of Twenty Five Main, says that they didn’t try to reinvent wheel with their cupcakes. They stick to classics and just make them good. So you won’t find any crazy, frilly, over-the-top flavors…you’ll just find classics that are done well.

The biggest thing that stood out to me when trying their cupcakes was Twenty Five Main’s approach to frosting. Take a look! There is not a lot of frosting. This is seriously uncommon in the cupcake world. Like really uncommon. And as a frosting-lover I usually turn my back on a cupcake that doesn’t have at least a 2:1 frosting to cupcake ratio. After all, you can’t ever have too much frosting, right?

Wrong.

At least in Twenty Five Main’s case. It just works for them. My honest-to-goodness, first reaction was that this (Vanilla Strawberry) cupcake was just that, really good cake that had been made in muffin tins. For some reason I imagined a seasoned wedding cake maker that had leftover batter and didn’t want to waste it. Maybe that would explain the controlled amount of frosting. Who knows. Their vanilla cake is moist and much lighter than most cupcakes. It had a very delicate flavor. (It must have more egg whites.) The frosting was pure and fresh and used real strawberries.

When your neck of the woods in Utah starts to get cold or you get a hankering to get away for a weekend to St. George, make sure you head over to Twenty Five Main in St. George. I highly recommend the Vanilla-Strawberry, Vanilla-Raspberry or plain Vanilla cupcake. You’ll enjoy it.

Spider Halloween Cupcakes

Bakerella & Cake Pops are coming to Utah

Cake Pops have been all the rage since Bakerella published her first adorable little creation! She’s come out with dozens of great ideas for these miniature treats from cupcake pops, reindeer, dogs, Hello Kitty and other creative characters. And now that her new book is out she’s visiting Utah on her book signing tour! I can’t wait.

Bakerella (aka Angie Dudley) will be at the Trolley Square Williams-Sonoma on Thursday, October 14 at 1 pm. I’ve heard that she’ll be there from 1-3 p.m., possibly 4 p.m. She’ll most likely be doing a light demonstration! I’d plan ahead and get there early. You know how nuts Utah women are about these sorts of things! …like REALY NUTS!

Huge FYI: You’ll need proof of purchase from Williams-Sonoma for the signings in their store. I’ve talked to the Trolley Square store and they are expecting a huge crowd. I echo their advice…buy your book now! That way you won’t have to stand in line the whole gosh-darn time. (Those of you that went to The Pioneer Woman’s signing will remember that craziness.)  And because I love you all I’ll give you more tips. The Provo Riverwoods Williams-Sonoma is currently out of stock. So just the Trolley Square store has copies…they just got a shipment in tonight.

3 Utah Cupcake Bakeries Face-off Today

Utah is about to have its first public, cupcake showdown. The contestants are all owners of local cupcakeries or bakeries that sell cupcakes: Leslie Fiet of Mini’s Cupcakes, Romina Rasmussen from Les Madeleines and The Sweet Tooth Fairy herself, Megan Faulkner Brown. This local cupcake war is hosted by The Deseret News Fall Home Show and begins today at 3 pm.

The competition on both taste and decoration. Each contestant, along with their selected assistant will have 45 minutes to prepare cupcakes made with a secrete ingredient that one the judges have selected. The contestants have no idea what this ingredient will just that it will most likely follow the competition’s Halloween theme.

Bakery owners are both excited and anxious to find out what the mystery ingredient is, “I’m just hoping whatever the mystery ingredient is that it’s something that I’m familiar with. I don’t consider myself a ‘chef’ just a home-schooled, passionate baker, so I hope the ingredient is something I’ve worked with before,” says Megan Faulkner Brown, owner of The Sweet Tooth Fairy bakeries that span the state from North Salt Lake to St. George.

The mystery ingredient could be anything sweet or spooky from licorice, candy corn to pumpkin. Nobody knows, except maybe judges Chef Bryan Woolley, host of KUTV cooking show and chef; Chef Tom Woodbury, Cooking with Tom; and Steve Hatch and Katie Masterson, Hatch Family Chocolates. But who knows.

According to the competition rules. Each baker is able to bring basic, pantry items like flour, sugar, butter, eggs, oil, leavening agents and their own extracts and flavorings. They will then incorporate the selected item/ingredient and make a cupcakes that will be judged on texture/crumb, originality and the incorporation of the mystery box item.

After that the contestants must design a cupcake display that is a Halloween-themed character. A maximum of 48 cupcakes and a minimum of 12 cupcakes must be used. Displays will be judged on creativity, color combination, originality and overall appearance and best use of cupcake combination.

For me, this is going to be a very interesting competition. I’ve tried dozens of cupcakes from each local bakery; all are good, if not great cupcakes. It’s going to be a very hard competition to judge since cupcakes are so subjective. I just hope the competition lends itself to a level playing field. The biggest deterrent will be the use of the mystery ingredient and following the festive Halloween theme.

I’ve got absolutely no guess as to who the winner will be, I’m just smiling from cheek to cheek that this cool event is happening. I know that the contestants agree with me.

“The most exciting part about this is that Utah is doing its own version of Cupcake Wars,” says Mini’s Cupcakes’ owner, Leslie Fiet. “We are bringing cupcakes to the forefront so it’s good for all of us cupcake shops. It’s exciting to be involved in this cupcake competition.”

One of the best cupcakes I ate this summer was this butterscotch cupcake from Dippidee in American Fork. With one bite I was shot back into time; a time where I was begging my mom to give me change so I could bike over to Dairy Queen and get me a butterscotch Dilly Bar. Isn’t it crazy how a cupcake can do that? This cupcake is a delight. The cake itself is vanilla and the cream filling (a Dippidee specialty) is butterscotch. Then its topped with buttercream frosting and dipped in butterscotch! I’m warning you–it’s rich. But man, oh man, it is worth it.

33 Utah Cupcake To-Dos

Hello fellow cupcake lovers.

I’ve decided to take a bit of a cupcake blogging vacation. I’ve scheduled some R&R, will be working on some site upgrades for Utah Loves Cupcakes, working on some exciting new projects (yes they are cupcake related), and overall just give myself a bit of a break. I haven’t given myself one since I started blogging well over two years ago.

I know sometimes when bloggers stop posting for a while some may assume they are having some crisis or something like that. I assure you I am not. I’ll still be eating cupcakes (had an awesome Red Velvet from Cupcake Chic yesterday), making cupcakes and posting a couple times a week on my personal baking blog, Project Domestication. I honestly just want to give myself a break to finish out the summer and come back making Utah Loves Cupcakes an even better place for cupcake enthusiasts.

17. Buy local ingredients from your local farmers market and make a special seasonal cupcake.
18. Take a trip to St. George, visit 25 Main Cafe and Cake Parlor and try my favorite vanilla strawberry.

26. Get a frosting shot at The Sweet Tooth Fairy, So Cupcake, Mini’s or Dippidee.
27. Order custom cupcakes from a Utah Cupcake bakery that doesn’t have a storefront like Craving’s–Alisha’s Cupcakes or Sugared Magnolia.

Cupcake Wars on Tonight!

Cupcake Wars is on tonight and I’ll be watching. I’ve been a pretty devote fan. For me, each episode of the series gets better. Even though some of the contestants keep forgetting their is a theme! Erg.

Tonight’s episode:
Four creative bakers vie for the chance to have their cupcakes on display at a vintage-inspired event. Contestants include: Eileen Kerbel of Molly’s Cupcakes (Chicago), Farshid Hakim of La Provence Patisserie Café (Beverly Hills, Calif.), Lindsay Esparza of Cupcakes (Scottsdale, Ariz.) and Jasmine Frank of Jazzy Cakes (Sherman Oaks, Calif.).

Guest Review: Decadent Temptation in Logan

Editor’s note: Let’s give a warm welcome for a very special guest author, Chef Whitney Olsen. Whitney hails from Logan, Utah. I met her via Facebook when I was perousing the Facebook page she runs, Logan Foodies. As much as I’d like, I can’t make it up to every opening of each Utah cupcakery. My husband and I were some of the first customers to dash into Temptation Cupcake for their grand opening. It wasn’t just coincidence that we were there that day—we’d been stopping by their location every day for the previous two weeks, waiting for cupcakes to appear. We watched the counters with their clever (and cute) cupcake boxes go in, then the charming pink and brown tables, and a squashy brown couch. And then, at long last, Temptation Cupcake was open.

All cupcakes are not created equal. We’d had cupcakes from bakeries across the Wasatch Front, and we had high hopes for the one in Logan, where we live. We were not disappointed. We bought four cupcakes that first day: blueberry pie, cookies and cream, and two red velvet, (our wedding cake was red velvet). We started with the crimson-colored ones and each took a bite. We were in big trouble—this was good.

Temptation Cupcake’s cake is moist and dense, but still fluffy, like the essence of an entire cake sits in the palm of your hand, like they have baked every ounce of cupcake that could possibly fit in their chocolate-brown paper baking cups. And instead of falling apart into tragic pieces when I take a bite, a Temptation cupcake drops just a crumb or two, as though to say, “Honestly? Come on, take a real bite!” The bakery often offers filled cupcakes, too, and the fillings only make the cake even more delightful. A smudge of raspberry filling, or key lime pie, or Bismark custard in every bite is a transcendent dessert experience.

And that’s just the cake. Temptation Cupcake’s frosting is a singular creation, whether in buttercream, cream cheese, or whipped cream. Temptation Cupcake’s frosting is fluffy. There is no other word for it. Piped into smooth spirals atop every cupcake, Temptation’s frosting is a whipped, airy confection—just the right amount of density, just the right amount of air.

So they make a remarkable cupcake. What about the location? Temptation Cupcake is nestled in a small strip mall at 1010 North Main Street and has plenty of parking. Walking inside, a stylish, contemporary divider guides customers towards the counters surrounded by glass panes. Behind the glass, about a half-dozen bubblegum-pink bins organize cupcakes by flavor. Their chic wood floors and use of contrast (whites, pinks, and dark browns) throughout the establishment is attractive, and yet not too girly for the guys to stop in. Temptation Cupcake’s front of house is contemporary, cute, and cozy. There is a toy table for parents stopping in with children.

Temptation Cupcake is owned and operated by a husband and wife duo, Derek and Taylor. Their two darling little boys are often at the bakery, rolling toy trucks across the floor in the play area, or helping to ring customers up. The cupcakes are creations by Derek, who Taylor says has a talent for cooking (Temptation Cupcake customers agree!), and who is the official cook in their household. (Though Taylor says she makes mean lasagna and tacos.) Derek bakes, and Taylor manages the storefront. Taylor knows her “regulars,” often by name, and can always tell customers which cupcakes are the regulars’ favorites. And boy, does she know her cupcakes. Every customer is treated to a full presentation of the flavors for that day—I feel like an honored guest at their decadent banquet every time I go in.

Chocolate Squared (chocolate cake/chocolate buttercream)
Black ‘n’ White (chocolate cake/vanilla buttercream)

Coconut (light coconut or chocolate cake/coconut buttercream/shredded coconut)
Red Velvet (light chocolate cake/cream cheese frosting/tiny candy heart)
Chocolate Ganache (chocolate cake/chocolate ganache)
and the brand-new Signature (vanilla or chocolate cake/cream cheese frosting/silver baubles and mini chocolate chips)

Past flavors include peach cobbler, s’more, blueberry pie, pina colada, cookies ‘n’ cream, key lime, candy bar, Bismark, (chocolate) peanut butter, raspberry cream, strawberry shortcake, cherry pie, chocolate mint, strawberry lemonade, and more! They also bake up great sugar cookies, and, if you’re lucky when you stop in, Cakesters, super-moist cylinders of cake dipped in Temptation’s signature chocolate ganache.

Temptation Cupcake is a decadent, lovely place to be, and has all the things a good establishment needs—fabulous ambiance, service, prices, food, and location. Don’t miss it on your next trip to Cache Valley, or better yet, make a trip up just for that tempting cake and fluffy frosting.

6 Favorites at Cupcake Chic’s New Storefront in Orem

Cupcake Chic has been open for nearly a week and I’ve already found my favorite things about the new cupcake bakery in Orem. Though the owners keep reminding me they are just in soft opening mode and there is much more coming, I can’t help but be excited by what they already have for me to enjoy. Here are the top six things I’m loving about Cupcake Chic.

6. Cupcake Mug – I love boutique items and non-edible cupcake gifts. They are a natural fit in a cupcake bakery.. Plus I’m an herbal tea lover and can already see myself sipping some chamomile in this cute mug.

5. Branding Detail/Pronunciation Window Sticker – Cupcake bakeries earn extra bonuses in the details. When you’ve got a storefront as a blank canvas, everything counts. I love how Cupcake Chic uses this window sticker to help customers know how to say their name properly. It’s also just cute and lets us know what is inside!

4. Custom Cupcake Case – I wouldn’t expect anything less than a custom cupcake case from Cupcake Chic. I love the modern look of theirs and I want to get my hands on one of those trays—each cupcake fits so comfortably.

3. Cupcake Bar – Seating is essential in a cupcake bakery. It transforms the old fashioned grab-n-go bakery to a place where you really want to hang out and enjoy a sweet dessert. Cupcake Chic has regular tables, but I’m keen to this cupcake bar. What a fun place to people watch. Don’t you love the modern and industrial-style chairs?

2. Flavor Menu & Schedule – I’ve got my favorite flavors at each cupcake bakery. The function of a flavor menu/cupcake schedule is to let customers know what flavors they can look forward to each day. Of course there are popular flavors that are available every day, but special flavors are only available certain days of the week–my favorite flavor, neapolitan is on the menu Tuesday, Thursday and Friday. Props to Cupcake Chic for making a schedule. I also believe flavor menus encourage customers to try new flavors. I for one am looking forward to trying carrot ginger. I think that’s the only flavor I haven’t tried yet.

1. More accessable Cupcake Chic cupcakes - I love cupcake chic cupcakes. I’ve been waiting patiently for more than two years for them to open a storefront. I would travel to any coffee shop, boutique or event to get my fix. So to have these delicious treats so accessable–and in my home town–is wonderful.

Brotherly Love at The Chocolate

It’s not every day that The Chocolate Dessert Cafe adds a new item to their menu. In fact, this is the first permanent addition to the two-year old bakery’s repertoire.

The Chocolate Dessert Cafe in Orem is a dessert lovers dream. It’s located in a quaint historic home on Orem’s State Street, and the cottage is filled with jazzy music, relaxing colors, sweet smells and friendly staff. The warmth and passion for sweet treats shines through on The Chocolate’s menu.

At the Chocolate, vanilla is not just called vanilla, and dark chocolate definitely not dark chocolate.  The owner, Ange Christiansen, pays homage to important people in her life and career through each cake’s name. She has named cakes after her husband (The Husband), her best friend (The Dottie) her bakery mentor (The Veronika) and other people or places that have inspired her lifelong dream of creating cakes by the slice.

“Ever since the bakery cafe opened I’ve been getting grief from my three older brothers,” Christiansen said. “They keep wondering when they will have ‘their’ cake.”

Christiansen finally nailed down a new cake flavor and name which she dedicated to her three older brothers. The new treat is aptly titled “The Brothers.”

And it’s quite fitting. The whipped cream cake is topped with three different berries both tart and sweet: strawberry, blackberry and raspberry. “Three berries for three brothers,” Christensen continued.

The cake is perfect for summer: light and refreshing. It’s reminiscent of strawberry shortcake, but with a bit more refinement. And there is a secret ingredient to The Brothers that Christiansen will never reveal.

As for the three namesakes, they are happy to find their place on their kid sister’s menu.

Like all layer cakes sold at the bakery, customers can purchase The Brothers by the slice ($4.49), and in a Mini Cake (5-inches) for $13 inside the bakery. The cake is also available in a celebration size by special order ($40).  The Brothers has also been translated into cupcake form, which is casually known by the nickname of Berry Licious. The individual-sized treat has the same components as its big brother but instead of layering berries and whipped cream and garnishing with toasted coconut the Berry Licious  is filled with a fresh strawberry and topped with a generous portion of satiny whipped cream then crowned with a raspberry and blackberry.

Depending on how you eat your cupcake, you may or may not notice that when it is cut in half the fresh red strawberry forms a heart shape. Perhaps a sweet symbol of love from a sister to her brothers? Maybe.

The Brothers  will be the newest rotating cake flavor at the dessert cafe. It’s available for purchase on Mondays and Tuesdays, or for pre-order any day of the week. Berry Licious will be available through special order only. You may want to put in a call for it now, it would make the perfect summer dessert for any event.
